When we want to celebrate a special occasion and we’re cooking at home, we usually make filet mignon. Why? It’s our favorite. Neil remembers having a filet at the first nice restaurant he went to, and it’s not only nostalgic to him, but he actually prefers the flavor. Filets are traditionally a lean cut, and he finds them to be just as flavorful as other traditional “manly” cuts of meat. With Father’s Day just a week away, he had his eye on these organic beef tenderloin steaks from our friends at Verde Farms.

When it comes to cooking the perfect steak, check out this recipe from Bobby Flay. Be sure to not skip the resting step before digging in to ensure perfectly juicy steaks. There’s arguably no better accompaniment to steak than (drumroll please…) potatoes! While you’re out grilling, you might as well make the potatoes out there too, right? No need to turn on the oven and heat your house with this recipe. Simply quarter a 1 lb. bag of small yellow potatoes and toss them a bowl with:
1 teaspoon Kosher salt
1 tablespoon Herbes de Provence
3 tablespoons olive oil
Cook in a cast iron pan on the grill until fork tender. Turn potatoes in the pan occasionally so all sides cook evenly.
These grilled potatoes are crispy on the outside but smooth and buttery on the inside. They’re a nice alternative to the typical mashed potatoes you might go to on steak night. This Father’s Day, let dad do his thing out on the grill, but be sure to check out Verde Farms steaks at Schnucks.
