Garlic Cheese Bread

We’ve never received more requests for a recipe than for this one. As many did, Neil fine tuned his bread making skills during the pandemic, and has kept them rolling making some sort of a pizza almost every week. His Detroit-style pizza just can’t be beat. He uses the recipe from King Arthur, and these pans recommended by them have also taken it to the next level.

I don’t know why, but the other day I was reminiscing about our college days, and Pokey Stix popped in my head. What are Pokey Stix you ask? (All our Mizzou friends are saying, “YAAAAASSSS!!”) They’re the literal bread of life college kids at Mizzou order to their dorms at 2am from Gumby’s. Gumby’s has been dishing out pizza for years in Columbia, but my favorite was always the Pokey Stix. This take on garlic cheese bread comes with whatever sauces you want for dunking. It’s the perfect late-night snack for any college kid…. OR parents in their late 30s, apparently.

Our mission was to create dish similar to our beloved Pokey Stix, and I think this recipe is pretty darn close. For the dough, you’re going to follow the King Arthur Detroit-Style Pizza recipe. Once the dough is ready to be used, oil the bottom of a pan and spread it out. We recommend these Detroit-style pans, and can’t guarantee using other types. If you try another pan, let us know how it turns out!

Next, melt butter and spread evenly all over that dough. Season generously with garlic powder and garlic salt on top.

Next, sprinkle a layer of Parmesan cheese on top. Spread out the shredded blend of cheddar and mozzarella cheeses. Look at all that cheesy goodness!

In it goes until it looks like this heavenly work of art!

Transfer the garlic cheese bread to a wire rack to cool, then slice into 1″ wide sticks. Dunk in your favorite sauces. We recommend marinara sauce, ranch, or drizzle with spicy honey.

Garlic Cheese Bread

Prep Time: 40 min. Cook Time: 4 hours 40 min. (According to the King Arthur Recipe)

Ingredients:

Detriot-Style Pizza Dough from King Arthur’s Recipe

3 tablespoons butter

3 tablespoons grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon garlic salt

12 oz. mozzarella and mild cheddar blend, shredded

Preparation:

Follow the instructions for the pizza dough according to King Arthur’s recipe. Coat the bottom of a Detroit-style pizza pan with olive oil. Using your fingers, evenly spread out the dough in the pan. Melt butter in a small bowl and brush on top of the dough. Sprinkle garlic powder, garlic salt, and parmesan cheese on top of the dough. Top with the mozzarella and cheddar blend. Bake at 425° for about 25 minutes until cheese is bubbling and edges are golden brown. Remove from the oven and using a spatula to loosen, transfer the garlic bread to a wire rack to cool, then cut sticks into 1″ strips. Serve alongside ranch, marinara, and spicy honey for dipping.
