Whole30. Keto. South Beach. North Beach. Low Carb. Low Sugar. Low Happiness. (Kidding.) It seems that there’s a continual lineup of trendy red carpet diets that swear to improve your overall health and change your life forever. We’ve done Whole30 a few times and did gain some valuable information from doing so, but these days we are a bit hesitant in trying the latest “it” diet. For us, it’s all about balance. Eat healthy, splurge occasionally, drink less, work out regularly. Oh, and don’t forget to drink more water! While we were doing Whole 30, we stumbled upon a few recipes that we still keep in our rotation of meals. This is one of them. I don’t want to claim that this recipe is in fact Whole30 approved or whatnot, because it seems the rules are always changing. I do know this: it’s healthy, it’s flavorful, it’s fast, it’s cheap. What more could you want from a weeknight meal?
Before experimenting with this recipe for the first time, I had never tried canned salmon. In fact, just saying “canned salmon” made me a little queasy. But I promise, it’s good. Even Neil, who doesn’t like tuna salad, loves these salmon patties. The recipe couldn’t be easier. In a bowl, add canned boneless skinless salmon (we use the Trader Joe’s brand), almond meal, an egg, the insides of a cooked sweet potato, fresh parsley, garlic, lemon juice, garlic, and any spices or seasonings you want to throw in (salt, pepper, hot sauce, whatever).
Mix the egg into itself for a second, then combine all of the ingredients.
Form the salmon patties into little discs about the size of the palm of your hand. If your mixture is too wet, add more almond meal. If it’s too dry, drizzle with a little olive oil or add another egg.
Coat a non-stick pan with coconut oil and cook the patties over medium heat for 3-4 minutes per side or until golden brown.
We like to serve ours on top of a bed of spinach and drizzled with that delicious peanut dressing Trader Joe’s sells in their produce section. I promise this is not a sponsored post by Trader Joe’s, we just like their products! These are also great with rice and sweet chili sauce.

Salmon Patties
Prep Time: 20 minutes Cook Time: 16 minutes
Ingredients:
2 6-oz. cans boneless skinless salmon (we use the kind from Trader Joe’s)
1 sweet potato, cooked
1 egg
1 small onion, finely chopped (about 1 cup)
1/2 cup almond meal
1 lemon, juiced
1 clove garlic, minced
1 cup Italian parsley, finely chopped
1 teaspoon kosher salt
1 teaspoon black pepper
Coconut oil
Preparation:
After cooking the sweet potato, discard the skin and place the insides of the potato in a large bowl to cool. Once cooled, add all other ingredients in the bowl except the coconut oil. Mix well to thoroughly combine. Form patties with your hands into round discs about the size of your palm.
In a large non-stick skillet, heat 1-2 spoonfuls of coconut oil over medium heat. Coconut oil should lightly coat the bottom of the pan. Cook each salmon patty for 3-4 minutes per side, or until just golden brown.
Serve with your favorite sauce (we like either Trader Joe’s spicy peanut dressing, or sweet chili sauce) atop rice or spinach.
Makes 12 patties
