Everyone in St. Louis knows that Eckert’s is king of peaches around this town! Our family loves spending a day picking peaches straight off the trees and enjoying their juicy goodness right there in the field. Peaches are available at Eckert’s for picking the next two weeks. If you can’t make it out to the farm, just stop by Schnucks! We went this weekend and there were pleeeenty of Eckert’s peaches greeting us in the produce section.

Peach recipes are funny. There are TONS for pies, cobblers, and salads, but that’s kind of it. We wanted to think outside the box for this one and make something that is 1) easy 2) healthy(ish) 3) fresh. Our kids love this recipe for a Peach Lassi. What’s a lassi, you ask?

Traditionally, lassi are yogurt-based drinks from the Indian subcontinent. There are many variations, including sweet and savory, with a few different ingredients. This is a version that our kids are loving this summer. Of course, the star ingredient here is the peach! Remove the pit and slice, then add to a blender.

Add yogurt, milk, ice, and a pinch of cardamom. Shout out to Global Foods in Kirkwood, MO for a great price on cardamom.

Blend together and enjoy. Soak up the end of peach season with this delicious recipe!
Peach Lassi
Prep Time: 5 min. Cook time: 0 min.
Serves One
Ingredients:
1 ripe peach, pit removed and sliced
1/2 cup fat free vanilla Greek yogurt
1/4 cup milk
1/4 cup ice
Pinch of cardamom
Preparation:
Add all ingredients to a blender. Blend until smooth and transfer to a drinking glass. Enjoy!
